Erin's Boozy Banana Pudding


2 (8-oz) containers frozen whipped topping, thawed

1 (14-oz) can sweetened condensed milk

1 (8-oz) package cream cheese, softened

1 C whole milk

1 ½ C Ole Smoky Banana Pudding Moonshine Cream*

1 (5-oz) box instant vanilla pudding mix

4 to 6 large bananas, peeled and sliced

2 bags Pepperidge Farms Chessmen Cookies**


Line the bottom of a 13x9x2-inch dish with 1 bag of Chessmen cookies and layer bananas on top. It takes one WHOLE bag to make both the bottom and top “crusts” – so no snacking! Drizzle ½ C Ole Smokey Banana Pudding Moonshine Cream over the top of the bananas and cookies and set aside.***


In a large mixing bowl, combine 1 C whole milk, 1 C Ole Smoky Banana Pudding Moonshine Cream, and instant vanilla pudding mix and blend well using a handheld electric mixer for two minutes. Set aside. (A large bowl seems crazy, but trust me on this… Also, the pudding mix box will call for 3 C milk… but we only use 2 C liquid – it’ll make sense in the next step.) Using another bowl, combine the softened cream cheese and condensed milk together and blend with a handheld electric mixer until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

Alternate (Some Boozier) Fixin’s:

* If you’d like it to be a bit stronger on the boozy end, you can use 2 C Ole Smoky Banana Pudding Moonshine Cream, and no whole milk.


** If you prefer to go a more traditional route, this is great with Nilla Wafers, too. I love the Chessmen because they are my favorite cookie (and because it makes it so pretty. You can also do a double layer (I like to do this when we are having a crowd)! For this you’d need: •3 bags Pepperidge Farms Chessmen Cookies •8 – 10 large bananas, peeled and sliced Prepare everything else as above, but after you drizzle the cookies/bananas with ½ C of liquor and make the filling you would put in ½ of the filling, then make another layer of cookies/bananas. Drizzle that layer with ¼ C of liquor and pour the remainder of the filling in before topping with the last bag of cookies.


*** You can sub bourbon for the Ole Smokey Banana Pudding Moonshine Cream in the drizzle. In that case (for a single layer) you would drizzle with ¼ C of bourbon. For a double layer you would use ¼ C in the base and a ¼ C in the middle layer.
